Cheddar (mild)
We all know cheddars. They come in many styles, from mild and smooth to crumbly and tangy to firm, sweet, sharp and complex. The current offering is a young one, aged in our aging room for 3 months. This example is crumbly and mild, with only a hint of the tangy sharpness that will develop over time if aged for 5 - 6 months or more. We will eventually offer sharp and extra sharp versions as our inventory matures.

Raw milk Edam
Edam is another semi-hard cheese with a distinct nutty, salty, creamy flavor. It is a farm favorite.
Asiago
The original comes from Northern Italy and varies from very young, mild table cheeses to sharply aged examples. As mature flavors develop, they are described as savory and nutty with zesty qualities. Sufficiently aged they make fine grating cheeses. This example is of the young, fresh variety, showcasing the flavors of our farm fresh milk.
Frozen Dairy Desserts!
To be ice-cream it has to be >10% fat derived from cream, but we wanted our product to be single-cow origin dessert direct from the farm- so for that reason, its called "dairy dessert". We use pasture-raised eggs from a licensed egg farm (per regulations) And that means more fresh eggs left for you. Coming soon!!
Fromagina
A fresh pasteurized whole-milk cheese, this can be spread on bagels, used to make icing, or baked into spinach dip, crepes, pizza and as a thickener in sauces. Its made with milk instead of cream, but may of us prefer it on our bagels or crackers! It is similar to cream cheese or
Neufchâtel (but whole milk!).
Fresh Mozzarella
Available only within 1-3 days of making, this may be offered at our farm-stand days to go with fresh tomatoes.
